This is my favourite salad recipe ever! I have to admit that I didn’t come up with it… My friend made me this salad one night for dinner and now I make it all the time.
To start there are a few things you need to prepare.
Roasted Butternut Squash:
Step 1. Peel butternut squash, remove seeds & diced into cubes
Step 2. Line baking sheet with tin foil or spray with pam. Add butternut squash cubes to pan
Step 3. Drizzle or spray olive oil over butternut squash
Step 4. Season with Mrs. Dash Original Blend & Paprika (you can season however you wish, this is just my favourite combination)
Step 5. Roast in oven at 400 Degrees for 20 minutes or until soft
Homemade Salad Dressing: (Makes 1 Serving)
1/2 Teaspoon Olive Oil
1 Teaspoon Red Wine Vinegar
1/8 Teaspooon Honey
Add ingredients together and shake well.
Most Amazing Kale Salad:
4-5 Cups Kale, Sauteed
1/4 Cup Cucumber, Chopped
6 Cherry Tomatoes
1/2 Cup Roasted Butternut Squash
30 Grams Light Feta Cheese, Crumbled
6 Almonds, Crushed & Roasted
1/2 Chicken Breast, Cooked
Heat pot with small amount olive oil, sauté kale on medium heat about 4-5 minutes. Kale will shrink down alot! Make sure you watch it as it will burn easily. Add ingredients on top of sauteed kale and top with homemade dressing. Enjoy!
